
APPLE (CODLINS) DUMPLINGS RECIPE
Ingredients
6 codlins or any other good apples.
butter paste
salt and water as necessary
Codlins are small immature apples or they can be any of several elongated greenish English cooking apples.
Take codlins or any other apples, pare and core them, make a little cold butter paste, and roll it up about the thickness of your finger.
Now lap the dough around every apple, and tie them singly in a fine cloth, boil them in a little salt and water.
Let the water boil before you put them in; bowl for one half hour.
Create a sauce from a little white wine and butter; grate some sugar round the dish, and serve them up.
Butter Paste
Ingredients
1 (one) pound of flour
1 (one) pound of butter
water
Directions:
1. Sift the flour.
2. Divide the butter into four parts.
3. Cut one part of the butter into the flour with a knife.
4. Make the butter and flour into dough with water.
5. Roll the dough.
6. Flake the dough with the rest of the butter.
7. Flake until all the butter is in.
