HIGH COUNTRY APPLE CAKE

Ingredients

1 3/4 cups sugar
3 eggs
1 cup oil
2 cups flour
1 teaspoon. salt
1 teaspoon vanilla
1 teaspoon baking powder
1 tbs. cinnamon
2 c. unpeeled, cubed apples
1/2 c. pecans, chopped (optional)

Measure and place all ingredients, except apples and pecans, into a large bowl. Beat together thoroughly with spoon.

Fold in apples and pecans.

Bake in greased and floured 9" x 13" pan at 350 degrees for 45 to 50 minutes. Cool and remove from pan. Serves 12.
